...Imoen, will she have leveled up while she was away? If so, is it determed by what level I am or is she a preset level? Also will she have learned any new spells on her own?

Also, right now I'm using Nalia as my main mage, but plan on taking Imoen again when I get the chance. I don't want to waste good spell scrolls on Nalia if I won't be using her later in the game. Should I be worrying about this and saving my scrolls for Imoen, or will I be able to find most scrolls again?

And please don't spoil me too much if you can help it. Thanks. :)

I'm pretty sure that she levels up, and I think it's a set level of experience that she's given. But don't hold me to that...

If you plan on trading Imoen for Nalia, I would definately start saving scrolls for Imoen. Don't bother having her write new spells if she isn't gonna be around. That would just be asinine.

She will definetly level up once back in your party.

Don't bother with all spell scrolls you find, keep only those you are planning to use.

It's probably preset. Last time I remember her having 400000xp while I had about 1200000xp. So you probably shouldn't wait too long before you go after her.

the scripting for the game, just as with the original baldur's gate, levels up characters not currently with your party, so in case you deside later on to change an npc or two, you aren't stuck with one like 5 levels below you

There's some 'not strictly true' advice appearing in this post. I'm not sure if Imoen does gain any experience compared to the start when you recover her in Spellhold. However, I can confirm from two earlier runthroughs that she is miles behind the rest of the party in terms of expereinece if you pick her up later in the game. So much so that she becomes a liability.

Also charcaters only 'gain experience' when then are not in the group in BG1 and 2 if you have not made any previous contact with them. Once you drop a character they stop gaining experience no matter what level your character reaches. Finally there appears to be a maximum level that NPCs can be at when you recruit them. So if you are level 17 and try and recruit a new character you will find that they will only be at something like level 12 (typically the maximum starting level).

Anyway, for more info on these subjects have a look at these earlier posts:

I've just checked using Infinity Explorer and it looks like Imoen will have 400,000 experience and be a level 11 mage level 7 thief when you find her in Spellhold regardless of what level you and the rest of the party are at.

She had 400.000 XP when she came in my group. I tried it twice. First time I had a level 10 party, second time I had a level 17 party...
