    Mine would be one sold only at Ye National Cheese Emporium; I forget the name of the cheese, but it's fairly hard to get.

    Good ol' cheddar. Mind you, I rely steadily on about 4 cookbooks for my evening meals, and a lot of the recipes have an Italian or Greek emphasis, so I appreciate that each cheese has something to offer.

    But when it comes to top of the heap, or if I have a choice about something to nibble on as a snack, my first choice will be cheddar.

    Cheddar for sure. There's a small shop in Ontario that makes something like a 6 year aged sharp to die for.

    I'm a big fan of Edam :) generally my favorite for everything, ever. I also like goats' cheese, brie and emmental... and yeah, cheddar too but not as much as the others. I didn't grow up with it, after all :p

    Goat cheese, Blue Stilton. blue Shropshire, Brie, Camembert, Caramelised Onion cheddar, extra mature cheddar...I'm a bit of a cheese nut really :)

    I like a variety of cheeses as well but my favorite is goats feta. It works so well in an assortment of dishes and salads.

    Dice, stir-fry some onion, red pepper and chicken. In a separate pan wilt some spinach with creme fraiche and brown sugar, mix it together and slop over some egg noodles. Sprinkle some cubes of feta on when you serve it :D

    Yes! Cheese!

    As with any true Dutchie (like Mesmero here :)), I love a good Gouda. I prefer a matured or old farmer's Gouda from the market. On brown bread. Ahhhh! Also great as cubes with a sharp mustard. And I prefer grated Gouda on pasta's. I hardly ever use parmesan.
    If food iso blood was running through my veins, it would be Gouda cheese. :D

    On melba toasts (not necessarily the brand Melba), I like Danish Blue or Stilton. There are some similar cheeses of which I don't remember the names.
    Of course, I like feta in salads and sometimes mozzerella in lighter ones (with tomatoes, basil, and balsamico)
    But none of that beats a simple cheese-sandwich.

    @ Silver - That recipe looks very good - you should re post it in the cooking thread so its with the collection. I usually don't cube the feta, I crumble it.

    Depends on the mood really. Some cheeses such as Emmental I really can't stand and I'm more fan of mild cheeses. I don't like blue cheese either, unless it's used in cooking where it certainly has its place. Port Salut, Cheddar, Gouda, Brie, Camembert and Venezuelan Beaver Cheese are all fine though. Edam is awfully boring and tasteless if you ask me, at least the ones I've tasted. If I'd have to pick one I'd probably take Port Salut over the others. I really its texture and taste.

    Havarty with Herbs - great on crackers with some summer sausage! Cheddar is definitely always a close second!
