Once I installed the XP cap remover, I had a lot of fun taking a C/F/M through BG1+ ToTSC, SoA, and going on to ToB.
He took a while, but was quite powerful by the end of SoA. I went for "100% completion" and so wound up with a lot more XP than the nominal SoA cap.
Once I started getting 7th level spells, the C/F/M got borderline overpowered compared to the rest of the party.

I've also found that creating a demihuman assassin and using Shadowkeeper to make him or her a fighter/assassin is borderline overpowered because you don't have to make the sacrifices a dual-classed character makes. You can continue to get the backstab bonuses and still get full THAC0 progression.

Without using shadowkeeper, up to today, I found that Thieves are potentially the best characters due Use Any Object and the powerful traps.

Killed Irenicus and Demogorgon effortlessly, just surrounding their spawning places with traps.

Any sorcerer I've made would definitely be the most powerful, able to nuke something completely to dust, or bury them in powerful summons.

For single hit most powerful, a half-orc fighter/assassin I ran through the games with could reliably one-hit backstab enemies to chunks, and using quarterstaves, could crit over 300 damage.

Undead killing most powerful would be a solo fighter/cleric (dual for max clerical power), walk into vampire lair, let them all gather around you, turn on Turn Undead. Great fun.
